If your coolant is pouring out it sounds like a hose gone or water pump failure. Hopefully the former in which case renew the hose. Lack of oil pressure is different. I'd check oil level. If low top it up. When was your timing belt last renewed? Was the water pump renewed at the same time? How long ...

Did your have the engine running when operating the roof? I always recommend that otherwise there is the danger of flattening the battery.

New calipers and or handbrake cables should cure it if you've replaced the discs and pads with the correct items. I take it you did wind back the pistons? Did they feel free or were they partially seized?

Sorry but I have never seen that warning symbol on a 206cc. We had a 2005 206cc allure. Which specific model is it?

I don't understand your terminology either. "left behind door open" If you mean left rear door open then it can't relate to a Peugeot 206cc.
