Can you remove the immobiliser chip from the key and just use it as a normal start, stop, open door key

No .. the immobiliser unit will prevent it from starting. It may need reconnecting to the car using PlanetPeugeot2000 ... if it is for your car. You can't re-programme a used one if it came from a different vehicle.

The immobiliser chip (a small black "piece of plastic" clipped into one of the key "shells") is separate to the remote module. You can remove the remote module, but, as gazza said, if the chip is removed, the car will not start.

Take someone else's credit card .. especially if that non-working key is found to be the wrong one!
